Ingredients

  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup finely shredded unpeeled zucchini, about 6 ounces
  • 1/2 cup Fisher® Chef’s Naturals Walnuts, chopped

Directions

  1. Preheat oven to 350°F. Spray a 9x5x3-inch loaf pan with nonstick cooking spray.
  2. Whisk oil, sugar together in a large bowl. Stir in remaining ingredients until well mixed.
  3. Spoon batter into the prepared pan and bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  4. Remove from the oven and cool for 10 minutes before serving.
