Walnut Butter Cookies

  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup walnuts, finely chopped (may sub pecans)
  • 1 cup cake flour
  • 1/2 cup sprinkles (color depends on holiday)
  • 24 walnut halves (may sub pecans)


  1. Preheat oven to 350°F. Cream butter and sugar in mixer at medium speed. Add vanilla and mix until very light and fluffy.
  2. At low speed, blend in flour and chopped nuts just until mixed. Mix in sprinkles by hand. Refrigerate dough until easy to handle (about 1 hour). 
  3. Form dough into 24 small balls. Place on ungreased cookie sheet. Lightly press a walnut half into each ball. 
  4. Bake 20 minutes or until lightly golden. Let cool before serving.
