Whisk sugar, oil, eggs, and extract in a large bowl. Stir in flour, baking powder and almonds to form a dense dough. Divide into 2 pieces. Form each piece into a ½ x 11 x 4-inch log on a parchment lined cookie sheet.
Bake for 25 to 30 min. at 375°F or until golden brown. Cool for 10 min. Slice on the diagonal into ½-inch slices. Place the slices cut side up back onto the baking sheet. Bake for 5 to 7 min., on each side until lightly toasted. Cool completely before storing
