Bourbon Plum & Walnut Crumble

  • Bourbon roasted plums with a walnut and oat crumble on top.

Ingredients

  • Compote Filling:

  • 3 tablespoons butter
  • 1/4 teaspoon ground clove
  • 2 tablespoons brown sugar
  • 1 teaspoon cornstarch
  • 1/2 cup bourbon
  • 2 pounds plums, quartered (8 medium plums)
  • 1/2 teaspoon salt
  • Topping:

  • 1 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 stick butter, at room temperature
  • 3/4 cup Fisher® Walnut Halves & Pieces

Directions

  1. Prepare the compote filling: Preheat oven to 400°F.
  2. Melt butter in medium pan.
  3. Add plums, sugar, cloves and salt. Stir to combine.
  4. Cook fruits 3 to 4 additional minutes, stirring occasionally.
  5. Add cornstarch and stir.
  6. Add bourbon, reduce heat to low and simmer 5 to 7 additional minutes.
  7. Remove from heat.
  8. Pour into 10” pie pan.
  9. Prepare the crumble topping: Combine flour, oats, walnuts, cinnamon, brown sugar, and salt in a medium mixing bowl.
  10. Incorporate butter with a pastry cutter or fingers until crumble topping starts to clump together.
  11. Sprinkle over plum compote. Bake 15 to 20 minutes until golden brown and fruit bubbles.
