These are the ultimate cookies – chocolate chips, marshmallows, vanilla and Fisher® Walnuts all in one. So good, you might not want to share!
1/2 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 cups (16 ounces) semisweet chocolate chips, divided in half
2 tablespoons (1/4 stick) unsalted butter
1/2 cup sugar
1 large egg
1/2 teaspoon coffee powder, dissolved in 1 teaspoon of water
1/2 teaspoon vanilla
1/2 cupFisher® Naturals Chopped Walnuts
2/3 cup mini marshmallows (60)
Preheat oven to 350°F.
Line 2 baking sheets with parchment paper.
Stir flour, baking powder and salt in small bowl. Set aside.
Stir 1 cup chocolate chips and butter in a medium metal bowl. Boil about 1 ½” of water in a medium saucepan, reduce heat to low. Set metal bowl with chocolate and butter over the saucepan of the barely simmering water stirring occasionally until melted and smooth. Transfer chocolate mixture to a large bowl and set aside. Remove bowl from heat.
Whisk sugar, eggs, dissolved coffee mixture and vanilla in a medium bowl until well blended.
Stir egg mixture into reserved melted chocolate mixture. Stir in flour mixture until just blended. Add nuts and remaining 1 cup chocolate chips.
For each cookie, drop 1 rounded tablespoon of dough onto prepared baking sheet, spaced about 3 inches apart.
Press 5 marshmallows into the center of each cookie. Then, gently press another tablespoon of dough on top each to cover the marshmallows and form 2-inch high mounds.
Bake cookies until the tops feel crusty when touched, about 14 minutes, rotating the cookie sheets about halfway through cooking.
