Nutrageous Oatmeal Cake

  • Oatmeal isn’t just for breakfast! Thanks to the brown sugar, cinnamon and Fisher® Walnut Halves and Pieces, this oatmeal cake will warm you up form the inside out.

Ingredients

  • Cake:

  • 1 1/4 cup water, boiling
  • 1 cup quick cook oats
  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Topping:

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1 cup sweetened flake coconut
  • 1 cup chopped Fisher® Walnuts Halves and Pieces

Directions

  1. Cake: Preheat the oven to 350°F. Line a 9 x 13-inch pan with aluminum foil and spray with non-stick cooking spray.
  2. Pour the boiling water over the oatmeal, stir and let sit while combining other ingredients.
  3. Mix brown sugar, butter, vanilla, sugar and eggs on medium speed in the bowl of an electric mixer. Beat in flour, baking soda, cinnamon and salt until well blended. Add the oatmeal and mix well on low speed.
  4. Bake for 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean.
  5. Topping: Boil the butter, brown sugar and milk in a saucepan for 2-3 minutes. Stir in the coconut and walnuts.
  6. Turn the oven to broil. Poke the hot cake with a bamboo skewer. Pour the topping evenly over the cake and place under the broiler until bubbly and browned, approximately 2 minutes.
