Ingredients
1 tablespoon vegetable oil
1/4 cup popcorn kernels
1/2 package (5.5 oz.) caramels, unwrapped
1 tablespoon butter
1 1/2 teaspoon water
1/2 teaspoon vanilla extract
1 cupFisher® Chef’s Naturals Walnuts
1/2 cup dried cherries
Directions
Preheat oven to 300°F. Spray large baking sheet with non-stick cooking spray.
Heat oil in a medium saucepan with a lid. Place 3 popcorn kernels in the bottom of the pan, when the kernels pop, add in the remaining kernels and cover the pan. Move the pan back and forth on the burner until all of the kernels have popped – you will hear the popping sounds slow down. Stop cooking when the popping noises become sporadic. Remove from heat and remove lid; set aside.
Place caramels, butter, water and vanilla in a 2½ or 4-quart microwave-safe glass bowl. Microwave on HIGH 1 to 2 minutes or until caramels are melted, stirring after 1 minute. Add popcorn to caramel mixture and stir gently to coat. Transfer to prepared pan and bake 15 minutes, stirring halfway through. Sprinkle dried cherries over hot caramel popcorn. Cool completely and break into clusters.
