White Chocolate Raspberry Blondies

  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 ounces unsalted butter
  • 1 1/2 cup brown sugar
  • 3/4 cup chopped Fisher® Chef’s Naturals Walnut Halves and Pieces
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup seedless raspberry jam


  1. Preheat oven to 350°F. Line a 13x9-inch baking pan with aluminum foil and spray with non-stick cooking spray; set aside.
  2. Combine flour, baking powder, and salt in a medium bowl; set aside. Cream butter with brown sugar in bowl of an electric mixer until well blended. Beat in eggs and vanilla, scraping bowl occasionally. Stir in flour until well blended. Stir in nuts and white chocolate chips.
  3. Reserve 1½ cups of blondie batter. Spread remaining batter into prepared pan. Spread with raspberry jam. Drop spoonfuls of reserved batter over jam layer. Bake 20 minutes or until toothpick inserted into center comes out clean. Remove to cooling rack; cool completely. Cut into bars to serve.
