I love serving this recipe & love chopping up 2 cups baby fresh spinach & sauteing it with mushroom mixture, for the stuffing. I guess you could add drained, canned or frozen spinach as well, but I always have fresh spinach on hand. I keep the parsley in it, but you could omit the parsley if adding spinach. I'll also add either some onion powder & ground sage or poultry seasoning to mushroom mixture as well. It's a favorite & I get alot of compliments when I invite friends over for dinner.
We loved this recipe. I always use a variety of mushrooms for move flavor. I served the chicken with spinach salad with berries and blue cheese and cornbread and sausage dressing. It was a marvelous meal.
