Black Bean-Pecan Veggie Burger

Black Bean-Pecan Veggie Burger

Ingredients

  • 1 can (15oz can) black beans, drained
  • 1/2 cup Fisher® Chef’s Naturals Pecan Flour
  • 1/2 cup Pepper Jack cheese, shredded (can substitute vegan shredded cheese)
  • 1/3 cup rolled oats
  • 1/4 cup flaxseed meal
  • 2 scallions, sliced
  • 1 egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 4 teaspoons cooking oil (such as canola, vegetable, or avocado oil)
  • 4 slices Swiss cheese, optional (for serving)
  • 4 burger buns (for serving)

Directions

  1. In large bowl mash half of black beans.
  2. Add remaining ingredients except oil and mix until well combined. Separate mixture into 4 even balls then form into patties.
  3. Heat large skillet over medium high heat. Add 4 teaspoons cooking oil. Gently place patties in skillet, season with salt and fry until golden brown. Flip patties, season with salt and top each with Swiss cheese slice. Cook until golden brown on bottom and cheese has melted. (Fry in batches if necessary, using 2 teaspoons cooking oil each batch).
  4. Place burgers on buns. Serve with lettuce, tomato, pickles, ketchup, and/or mayonnaise. For food safety, gently rub produce under cold running water.
