Honey Pecan Cod

  • Simplicity at its best- a full meal in a disposable packet for no cleanup. This recipe adds a bit of crunch and sweetness to a popular whitefish.   • 1 pound Cod fillets, cut info four 4-ounce portions
  • 2 tablespoons Honey
  • 1 tablespoon Dijon mustard
  • 1/2 cup Fisher® Honey Roasted Chopped Pecans


  1. Preheat oven to 425ºF. Fold four 16-inch piece of parchment in half. Cut each folded piece into the shape of one half of a large heart.
  2. Combine the mustard and honey. Place 1 piece of cod onto one side of each of the parchment hearts. Top with one quarter of the mustard mixture and 2 tablespoons of nuts.
  3. Starting at the top of the heart, fold 1/2- inch of the parchment in towards the fold, repeat around the edge of the heart to the bottom and the fold the point on the heart under the packet.
  4. Place on a cookie sheet and bake until internal temperature reaches 145°F with a food thermometer, about 25 minutes or cook until flesh is opaque and separates easily with a fork. Remove from oven and let rest for 5 minutes before opening.
  5. Note:   Add ½ cup spinach, peppers or zucchini under the fish before baking, if desired.
