Shrimp Stir-Fry With Peanuts

  • 1/4 cup orange juice
  • 1 tablespoon cider vinegar
  • 4 teaspoons low sodium soy sauce
  • 1 tablespoon sugar
  • 2 teaspoons cornstarch
  • 2 tablespoons peanut or vegetable oil
  • 1/4 cup chopped small green onion
  • 2 teaspoons minced fresh ginger
  • 2 large garlic cloves, minced
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1 pound peeled and deveined shrimp
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup Fisher® Roasted Salted Peanuts
  • 1/2 teaspoon sesame oil


  1. Combine juice, vinegar, soy sauce, sugar and cornstarch in a small bowl; set aside.
  2. In a large skillet, heat the peanut oil over high heat. Add the onion, ginger and garlic; briefly stir-fry until fragrant.
  3. Add the red pepper, broccoli and carrots and cook 2 minutes.
  4. Add the shrimp and stir-fry until flesh is pearly or white, and opaque, about 3 minutes.
  5. Stir the sauce, add to the skillet and cook until thickened slightly, about 1 minute. Stir in the red pepper flakes, peanuts and sesame oil; serve over rice, if desired.
