  • How do you improve a classic? Try our mouthwatering recipe with lemon-herb chicken, sweetened cranberries and slivered almonds! 


  • 4 cups cubed cooked, lemon-herb rotisserie chicken (about 1 ¼ lb)
  • 3/4 cup diced celery
  • 1/2 cup light mayonnaise
  • 1/4 cup Fisher® Chef’s Naturals Slivered Almonds
  • 1/4 cup Fisher® Dried Sweetened Cranberries
  • 1/4 teaspoon ground black pepper
  • 8 slices whole wheat bread
  • 8 Bibb lettuce leaves


  1. In large bowl, combine chicken, celery, mayonnaise, almonds, cranberries and black pepper; set aside.
  2. Lightly toast bread slices. Top 4 bread slices with 2 lettuce leaves and 1 ¼ cup chicken mixture. Top each with 1 bread slice

this is the perfect summer meal!!! I cant leave anything alone sooo....I use pecans instead of the almonds add shredded carrots for color and put craisins w/water (@tablespoon) in the microwave for 30 seconds allow to cool remove water (if any) and put it on a bed of lettuce. No dressing less calories but so filling and delish!
