Greek Chickpea Salad

Ingredients

  • 15 ounces chickpeas, rinsed and drained
  • 1 cup diced, peeled and seeded cucumber
  • 4 campari tomatoes cut into wedges
  • 1/4 cup chopped red onion
  • 1/2 cup pitted kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/2 cup Greek style salad dressing
  • 1/2 cup Fisher® Sliced Almonds
  • For food safety, gently rub produce under cold running water.

Directions

  1. Mix all ingredients in a medium bowl until combined. Refrigerate 2 hours before serving to allow flavors to blend.
  2. Note: To toast almonds, place in a large non-stick skillet over medium heat, stirring frequently until golden, 3 to 5 minutes.
