1 head cauliflower, about 1 3/4 pound
1 sliced medium onion
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup shredded Parmesan
1/4 cupFisher® Chef’s Naturals Pine Nuts
Preheat oven to 425°F.
Cut 1 head cauliflower into florets; combine with onion and olive oil on a large rimmed baking sheet, season with salt and pepper. Roast, tossing occasionally 15 to 20 minutes or until almost tender. Sprinkle with Parmesan cheese and pine nuts, stir to combine, and roast until cauliflower is tender, 5-10 minutes longer. Serve immediately.
