Spinach and Almond Couscous Salad

Ingredients

  • 3/4 cup bottled Greek salad dressing
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup quartered zucchini slices
  • 1/2 cup chopped red bell pepper
  • 3 ounces baby spinach, cut into strips
  • 5 ounces crumbled feta cheese
  • 1 cup toasted Fisher® Chef’s Naturals Sliced Almonds
  • 3 cups cooked couscous
  • For food safety, gently rub produce under cold running water.

Directions

  1. Combine dressing, oregano, garlic powder and salt; set aside.
  2. Toss zucchini, bell pepper, spinach, cheese, almonds and couscous in a large bowl with dressing. Serve chilled or at room temperature.
  3. Note: To toast almonds, place in a large non-stick skillet over medium heat, stirring frequently until golden, 3 to 5 minutes.
