Watermelon, cucumbers and blueberries mix perfectly with the clean, mild taste of Fisher® Chef’s Naturals Slivered Almonds to create a truly refreshing dish.
Ingredients
Dressing:
1/2 cup plain yogurt
1 tablespoon strawberry jam
1 teaspoon lime juice
Salad:
1/2 English cucumber, peeled
1 seedless watermelon wedge, 4 to 5-inches wide
1 cup blueberries
1/4 package (6 ounces) top with raspberries, (for garnish, if desired)
1/2 cupFisher® Chef's Naturals Slivered Almonds
2 tablespoons chopped mint
For food safety, gently rub produce under cold running water.
Directions
For salad, slice cucumber lengthwise, then again lengthwise. Cut crosswise into chunks, about ¾-inch in size.
Cut watermelon into same size chunks as cucumber. Place both in large bowl. Add blueberries, almonds and mint; toss gently. Refrigerate until ready to serve.
For dressing, combine yogurt, jam, and lime juice in small bowl; whisk until blended. Serve with salad.
