Sugar Snap Peas, Cherries & Almond Salad

  • The crispy crunch of snap peas and Fisher® Almonds mix perfectly with the sweetness of cherries. Top it off with the zesty sauce for a fruity, crunchy take on your meal’s vegetables! 


  • 1 1/2 cup Fisher® Chef’s Naturals Sliced Almonds
  • 6 cups fresh sugar snap peas, string removed
  • 3/4 cup dried cherries
  • 1/3 cup chopped red or sweet onion
  • 3 tablespoons olive oil
  • 2 tablespoons minced fresh parsley
  • 1 1/2 tablespoon fresh lemon juice
  • 1 tablespoon minced fresh mint
  • 2 teaspoons freshly grated lemon zest
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon salt
  • For food safety, gently rub produce under cold running water and scrub firm produce with a clean vegetable brush under running water.


  1. Preheat oven to 350°F. Line a rimmed baking sheet with foil. Spread the almonds evenly over the baking sheet. Bake for approximately 5 to 7 minutes total stirring after 3 minutes or until almonds are golden brown. Allow to cool completely before using.
  2. Bring a large pot filled with 3 quarts of water to a boil over high heat. Add sugar snap peas and cook for 3 to 5 minute or until peas are bright green and crisp tender; drain.
  3. Transfer peas to a large bowl. Add remaining ingredients and toss gently to coat. Serve at room temperature.
