Cornbread & Pecan Stuffing

Stuffing deserves a place at your table more than just once a year! Our homestyle recipe starts with a simple box of corn muffin mix. When you add apples, vegetables and Fisher® Pecans, and toast it all together, you get a side dish full of flavors and textures.

INGREDIENTS

1 package
(8.5 ounces) corn muffin mix
1
egg
1/3 cup
milk
1/4 cup
(1/2 stick) butter
1 cup
chopped Granny Smith apples
1/2 cup
chopped onions
1/2 cup
chopped celery
1/2 cup
chopped Fisher® Chef’s Naturals® Pecan Halves
1/2 teaspoon
kosher salt
1/2 teaspoon
fresh thyme leaves
1 cup
chicken broth

DIRECTIONS

  1. Heat oven to 400°F. Prepare 9x9-inch baking pan with nonstick spray. Combine muffin mix, egg and milk in medium bowl. Pour into pan.
  2. Bake 10-15 minutes or until golden brown and toothpick inserted in center comes out clean. (Cornbread will be drier than is typical). Cool in pan.
  3. Reduce oven temperature to 375°F. Melt butter in large skillet on medium-high heat. Add apples, onions and celery. Cook 3 minutes or until softened. Crumble cornbread into skillet. Add Fisher® Pecans, salt and thyme; mix well. Cook 5 minutes or until cornbread is toasted, stirring occasionally. Add broth; stir until moistened. Spoon into clean 9x9-inch baking pan. Cover with foil.
  4. Bake 10 minutes. Remove foil; bake an additional 10 minutes or until top is browned.
