INGREDIENTS

2 cups
flour
1 cup
(2 sticks) butter, softened
1 cup
Fisher® Pecan Chips, divided
1-1/2 cups
powdered sugar, divided
1 teaspoon
vanilla
1/4 teaspoon
table salt
1 cup
mini chocolate chips

DIRECTIONS

  1. Combine flour, butter, ½ cup Fisher® Pecans, ½ cup sugar, vanilla and salt in food processor. Process until smooth. Transfer to medium bowl. Stir in chocolate chips and remaining nuts. Refrigerate dough 1 hour or until firm. Place remaining sugar in large bowl; set aside.
  2. Heat oven to 325°F. Shape dough into 1-inch balls. Arrange on parchment paper-lined cookie sheets 1 inch apart.
  3. Bake 15 minutes or until set and very lightly browned. Cool on pans 10 minutes then roll cookies in sugar. Cool completely on wire rack. Roll in remaining sugar just before serving.

For a fresh twist, substitute 1 tablespoon lemon zest for the chocolate chips.
