1 1/2 pound beef top round or flank steak, cut into 24 strips
1/2 cup low sodium soy sauce
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
24 Wooden skewers
1 1/4 cupFisher® Dry Roasted Peanuts
1 teaspoon vegetable oil
1 clove garlic, minced
1/8 teaspoon red pepper flakes
1 tablespoon sugar
2 tablespoons lime juice
3 tablespoons low sodium soy sauce
2-3 tablespoons water
Marinade: Combine soy sauce, ginger and garlic in a plastic bag with a zip closure. Add beef, seal the bag and marinate, in the refrigerator, for 1 to 3 hours. Meanwhile, soak wooden skewers in water for at least 30 minutes.
Preheat grill to medium-high heat. Thread beef strips onto the skewers. Grill for 2 to 3 minutes or until the desired degree of doneness. Serve with peanut sauce.
Peanut Sauce: Place 1 cup peanuts and oil in food processor and process until they form a smooth paste. Add in garlic, sugar, lime juice and soy sauce Blend until smooth. Add water if desired to achieve a sauce consistency. Chop remaining ¼ cup peanuts and stir into sauce. Serve with hot beef skewers.
