Ingredients
1 cup sugar
1 stick (1/2 cup) unsalted butter, softened
1 large egg
2 cups all-purpose flour
1 1/2 teaspoon double-acting baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon freshly grated orange zest
3/4 cup fresh orange juice
3/4 cupFisher® Dried Sweetened Cranberries
1/2 cup coarsely chopped Fisher® Walnuts
Directions
Preheat oven to 350°F. Spray the insides of muffin pan with non-stick cooking spray or line with paper muffin liners. Combine flour, baking powder, salt and baking soda in a medium bowl; set aside. Stir orange zest into juice; set aside.
Beat sugar and butter together on medium speed in an electric mixer. Add egg, beating until incorporated, scrape down sides of bowl. Add the flour mixture alternating the orange juice. Always start with the flour and end with the flour, scrape bowl. Stir in cranberries and walnuts.
Bake for 25 minutes or until a toothpick inserted in the center of the muffins comes out clean. Let sit in pans 5 minutes then turn out to a rack and let cool.
