Ingredients
1 cup packed chopped pitted dates, about 6 ounces
3/4 cup boiling water
1 1/2 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup packed brown sugar
1 large egg
3/4 cup chopped Fisher® Chef’s Naturals Pecan Halves
Directions
Preheat oven to 350°F. Line 9 x 5 x 3 loaf pan with parchment paper then coat with butter and flour. Combine dates and ¾ cup boiling water in medium bowl. Let cool, about 10 minutes.
Sift flour, baking soda, cinnamon and salt into a small bowl. Beat butter in an electric mixer on medium until smooth. Gradually beat in sugar, then egg. Mix in dry ingredients alternately with date mixture scraping well after each addition. Stir in pecans. Transfer batter to prepared pan.
Bake bread until tester inserted into center comes out clean, about 55 minutes. Let sit in pan 10 minutes then turn onto cooling rack. Cool completely.
