Here's a new way to add flavor to sweet potatoes! The crunchy sweetness of chopped pecans ups the flavor factor like never before. Submitted by Betty Sullivan (Des Plaines, IL)
Ingredients
1 1/2 pound Sweet Potatoes
1 pound Tart apples, such as Granny Smith
1/4 cup Butter, divided
3/4 cupFisher® Honey Roasted Chopped Pecans
1 tablespoon Honey
1 teaspoon Grated Orange Zest
Directions
Peel the potatoes and cut into 1/2-inch cubes. Peel and core the apples, cut into 1/2-inch cubes; set aside
Heat 3 tablespoons butter over medium-heat in a large sauté pan. Add the potatoes and cook, stirring frequently or until potatoes begin to brown and soften. Add the apples and the remaining tablespoon of butter and cook for an additional 5 minutes or until the apples are soft and browned and the potatoes are tender when pierced with a paring knife.
Stir in the nuts, honey, and orange zest; serve immediately
