2016 Fisher® "My Fresh Twist" Recipe Contest Finalist. Don't let the term, 'truffle', fool you! This delicious truffle is easy to make and a big crowd pleaser! With just a few ingredients you can WOW your guests with a delectable little bite of love in minutes.
Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla bean powder or extract
1 cup white flour
1/2 cupFisher® chopped walnuts, divided
2 cups chocolate chips, divided
10 caramel candies, unwrapped
Directions
In a large bowl combine butter, sugars, and vanilla bean powder/extract. Then gently stir in flour, 1/3 cup Fisher® chopped walnuts, 1/4 cup and chocolate chips. Combine until mixture forms a dense dough.
To make truffles, spoon about a tablespoon of dough onto a cookie sheet lined with parchment paper. Spoon as many as you can onto the cookie sheet. Place in freezer for about 10 minutes. Meanwhile, microwave the remaining 1 ¾ cups chocolate chips in a medium microwave safe bowl on HIGH for 1½ minutes, stirring every 30 seconds or until melted. Take your chilled dough, roll into the melted chocolate chips and return to the parchment paper lined cookie sheet.
Place caramels in a small microwave safe bowl with 1 tsp. water and microwave on HIGH for 30 seconds. Stir until caramels are fully melted. Drizzle with the melted caramel on the truffles then sprinkle with the remaining 8 tsp. chopped Fisher® walnuts. Place in the refrigerator to set until ready to serve.
