  • With fresh pineapples, bananas, papaya and kiwi, this cake is a tasty diversion from the norm. While the fruit takes the cake, the Fisher® Pecan Halves really put it over the edge.


  • 2 eggs beaten
  • 1 1/2 bananas, mashed
  • 1 1/2 cup pureed/crushed fresh pineapple
  • 1 3/4 cup sugar
  • 1/2 cup flaked coconut
  • 3/4 cup chopped Fisher® Pecan Halves, divided
  • 1 teaspoon ground cinnamon
  • 2 cups self-rising flour
  • 1/2 stick butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups confectioner's sugar
  • 1 kiwi, peeled, sliced and quartered
  • 1/4 cup diced papaya
  • For food safety, gently rub produce under cold running water.


  1. Preheat oven to 350°F. Grease and flour a 9 x 5-inch loaf pan.
  2. Beat eggs in a large bowl. Add mashed banana and pineapple, mix well and stir in sugar. Add coconut, ½ cup pecans and cinnamon to banana mixture. Stir in flour ½ cup at a time.
  3. Pour batter into prepared pan. Bake for approximately 65 minutes or until a toothpick inserted into loaves comes out clean. Remove from oven and cool completely. Once cooled, remove from loaf pan.
  4. Beat butter, cream cheese and vanilla on medium speed until smooth. Mix in confectioner's sugar on low speed until mixture forms a thick frosting. Frost loaf.
  5. Sprinkle with remaining ¼ cup pecans, kiwi and papaya.
