Take your oven baked chicken to the next level, with Fisher® Pecans and the subtle sweetness of a honey glaze.
1 1/2 cup crushed corn flakes
1/4 cup finely chopped pecans
pinch ground red pepper
1/2 cup mayonnaise
2 tablespoons milk
3 pounds chicken pieces, skin removed
1/2 cup chopped Fisher® Chef’s Naturals® Pecan Halves
1/2 cup honey
1/4 cup butter
Preheat oven to 350°F. Line a jelly roll pan with aluminum foil and top with a baking rack. Spray rack with non-stick cooking spray.
Place crushed corn flakes, chopped pecans and red pepper in shallow dish or pan; set aside. Beat mayonnaise and milk in a medium bowl until smooth.
Dip chicken in mayonnaise mixture. Shake off excess mixture. Coat with cereal. Place in single layer, on the rack.
Bake 45 minutes to 1 hour or until chicken is tender, no longer pink and juices run clear. Do not cover pan or turn chicken while baking.
Pecan Honey Glaze: Toast pecans in a small heavy skillet over medium heat, stirring frequently, until golden, 3 to 5 minutes. Stir in honey and butter. Cook over low heat for 2 to 3 minutes, stirring occasionally. Remove from heat, and keep warm. Pour over chicken before serving.
