1 1/2 pound cod fillets, preferably at least 1 inch think, cut into 4 - 6 oz. portions
Directions
Preheat the oven to 375°F. Line a rimmed baking sheet with aluminum foil.
Combine panko, almonds, cheese, oregano, garlic powder and olive oil in a small bowl.
Place cod filets onto prepared pan. Press almond mixture onto top of pieces. Bake until internal temperature reaches 145°F on a food thermometer or cook until flesh is opaque and separates easily with a fork, 12 to 14 minutes.
